While I'm glad Ciel was spared from being eaten, Sebastian being his eternal Butler was not necessary. Since Ciel doesn't have a soul to give to Sebastian the contract should have been broken right then and there and Ciel and Sebastian could have parted ways, where Ciel goes to learn to be a demon and find his first master, while Sebastian tries to find another soul. It would be better if it ended that way and Sebastian says when Ciel leaves:

Sebastian: Farewell, Ciel Phantomhive.
